India for the G20 summit are set to experience a culinary treat with an extravagant all-vegetarian menu inspired by the «sharad ritu» or season of abundance. Hosted at Bharat Mandapam on Saturday, the two-day VVIP summit is being catered by ITC Hotels, featuring a selection of dishes that highlight the diverse ingredients from across India during the autumn season.
For lunch, attendees can anticipate tantalizing options such as tandoori aloo, kurkuri bhindi, zafrani gucchi pulao, and paneer tilwala.
Dinner, according to sources, will commence with paatram, millet leaf crisps adorned with dahi and chutney (chaat).
The main course will include vanavarnam, a jackfruit galette accompanied by glazed forest mushrooms, millet, and Kerala red rice, alongside various bread options including Mumbai pao. Desserts are set to offer madhurima, a cardamom-scented barnyard millet pudding, fig-peach compote, and ambemohar rice crisps served with milk and wheat nuts.
Beverages will range from Kashmiri kahwa, filter coffee, Darjeeling tea to paan-flavored chocolates.
When contacted, ITC Hotels declined to provide details or comment on the menu. However, it is understood that ITC has gone to great lengths to ensure a memorable experience for the gathering of world leaders in India.
«Taste connects us,» remarked a source familiar with the arrangements told TOI in an interview.
The schedule for the summit includes breakfast at the leaders' respective hotels, each offering lavish spreads. Lunch, snacks, dinner, and beverages, on the other hand, will be served at Bharat Mandapam.
