The true origins of French fries are a subject of debate. While France has the earliest recorded mention of French fries in a Parisian book from 1775, Belgian food historian Pierre Leqluercq argues that a 1795 French cookbook contains a recipe similar to modern French fries. Belgium, however, seeks UNESCO recognition for its fries, tracing their roots back to 17th-century villagers who fried potatoes when they couldn't fish due to frozen rivers. The term «French» fries originated during World War I when U.S. soldiers encountered the dish in southern Belgium, where French is the dominant language.
