History of National Burrito Day and the burrito
According to the Dictionary of Mexicanisms from 1895, the word «burrito» translates directly as «little donkey.» This designation describes a rolled tortilla containing food items. Different historians link the origins of burritos to the items donkeys carried, but others relate it to Mexican street vendors using donkey carts to distribute the products.
Mesoamerican cultural practices led people to use corn tortillas as wrappers for their meals. When wheat flour, along with livestock, came to Mexico during the 16th century, it triggered the creation of flour tortillas and spawned new ingredients for their consumption. The Central Valley of California welcomed burritos as a popular food among Mexican workers in agricultural fields during the beginning of the 20th century. El Cholo Spanish Café in Los Angeles became the first restaurant to introduce burritos on its menu during the 1930s. American adaptations of burrito cuisine incorporated the unfamiliar food elements of rice together with cheese and salsa, although these ingredients do not exist in authentic Mexican burritos.
