Unlocking the secrets of flavor: A journey into the art and science of taste
Arielle Johnson was working at the fermentation laboratory she founded at Noma, the restaurant in Copenhagen, Denmark, and had to explain the techniques she was using to the chefs. «They had a lot of knowledge that intersected with what I had, but what I learned as a scientist did not cross over,» said Johnson, who trained as a flavor scientist at the University of California, Davis. «I found myself explaining a lot of concepts to people over and over. It would lead to info-dumping on a cook for 10 minutes and saying, 'I wish there was a book I could give you.' So that's this book.» "Flavorama: A Guide to Unlocking the Art and Science of Flavor," her first cookbook, published in March, explains the basics of flavor, how it works and how it can be used. There are more than 75 recipes in the book, including one of Johnson's favorites, smoke oil, which she created using canola or grapeseed oil and Lapsang souchong tea to infuse smoky flavors without setting off the fire alarm in her apartment.

J&K sees uptick in militant activities amid polls; two army personnel injured in encounter
Army personnel were injured in an ongoing encounter in Bandipora area of north Kashmir on Wednesday. Jammu and Kashmir has witnessed an uptick in such incidents since the beginning of the Lok Sabha elections. This is the second encounter in Kashmir valley in less than two weeks. J&K Police said that a contact was established between militants and armed forces on Wednesday morning in Renji forest area of Bandipora's Aragam village and the search operation is going on. Officials said «two army troopers received bullet wounds during the initial exchange of fire with terrorists and both are stable». The armed forces have pressed helicopters and drones in service for surveillance of the forest area to prevent militants from fleeing. No casualty has been reported from either side, so far.

Amit Shah on Tuesday said the BJP used its majority in Parliament to nullify Article 370, ban instant triple talaq and bring a new citizenship law, and asserted the Modi government will never change the Constitution. Shah said the Modi government, on returning to office after the Lok Sabha polls, will bring citizens above 70 years under the ambit of the free health insurance cover of Rs 5 lakh and provide cooking gas cylinders directly to consumers. Shah slammed the INDIA alliance, saying they did not want the Ram temple to come up in Ayodhya.

LeT militant killed in Pulwama encounter
militant associated with Pakistan-based terrorist organisation Lashkar-e-Taiba (LeT) was killed in an encounter with security forces in Pulwama district of southern Kashmir on Thursday, said Jammu and Kashmir Police. The encounter took place in Frassipora village of Pulwama, where a joint cordon and search operation was launched by police, 53 Rashtriya Rifles of the Army and 183 battalion of CRPF, police said. The slain militant, identified as Danish Sheikh, was a resident of Ellahi Bagh area in Srinagar and had joined the militant ranks just two weeks ago, according to the police.
